The second most common juice used in cocktails. This citrus juice is about 6% acid; 4% from citric and 2% from malic, with small amounts of succinic acid (this is what gives it a little bloody taste). Lime juice should be used the day it is squeezed, some like it freshly squeezed and others like it a few hours old.

A tropical fruit, used in many tropical cocktails for its sweet flavor and yellow color. You can either juice a real pineapple, buy pineapple canned in juice (not syrup) or buy pineapple juice in a container.

A juice used in some cocktails for its tart and acidic properties. Grapefruit juice can be pre-squeezed and kept fresh for many days like orange juice, unlike lemon and lime juice.

A red colored passion and other fruit flavored syrup commonly used in 1930s-era tropical drinks but is now more of an uncommon ingredient. It was famously used in the original recipe for a Hurricane.

A sweet, banana flavored liqueur usually around 17-25% ABV.
2 oz
Also referred to as silver or white, light rums are unaged, aged in steel, or aged in oak and have had their color filtered out, and usually have a sweeter and lighter taste than darker rum varieties. The name refers to these rums lighter or clear color.
1 frond
A tropical plant with a tart yellow fruit. Most often used in tiki cocktails and fizzes.

Add all to a shaker then flash blend or shake with crushed ice. Pour into a large snifter glass, then fill with fresh crushed ice. Garnish with pineapple fronds and dried plantain chips. #blend #shake #ontherocks


A variation on this recipe uses unaged agricole in place of the white rum.
