A carbonated wine made from skin-less red grapes. Usually carbonated from natural fermentation, but increasingly via carbon dioxide injection.
Known locally as “il Specialino,” this naturally colored Americano is made with Trebbiano wine base infused with a proprietary mix of alpine herbs and spices; 17% ABV.
A citrus juice from the red colored blood orange. Its characteristic color forms when the orange develops in low temperatures during the night. Its flavor is deeper and more raspberry-like than regular oranges.
Build the ingredients in a Champagne flute or wine glass over ice. Garnish with a dehydrated blood orange slice. #build #ontherocks
For the reduced blood orange juice: pour 1 quart juice into a saucepan and simmer on low heat for 30-40 min, or until it reduces to 1 cup. Store extra in the fridge for up to a week.
