Lengthy aging (8+ years) lends some color and lots of flavor to the rum. Most often bottled as a blend of pot and column-distilled rums ('Blended' category). Varieties are available from all over the Carribean and the world.

These rich rums get their dark color from added caramel, not necessarily aging. Flavors are caramel and brown-sugar forward. Common examples are Meyers's and Coruba (Jamaican) or Gosling's Black Seal (Bermuda). A key ingredient in many classic tiki-era cocktails.

Also known as Vermouth di Torino, Italian vermouth, rosso and red vermouth; these vermouth have been sweetened with cane sugar or caramelized sugar, usually giving the vermouth 10-15% sugar and a slightly reddish brown color.

Italian for 'a little bitter,' this sweet, almond-flavored liqueur is made from either apricot pits, almonds or both. It can be drunk by itself, in coffee, or in many mixed drinks.
1 dash
Aromatic bitters from Fee Brothers, that are aged in emptied oak whiskey barrels from American distilleries.
