A simple syrup made with pineapple juice. To make yourself combine and dissolve equal parts by mass pineapple juice and syrup. Some sources simply buy pineapples that have been canned in syrup and use the residual syrup.

The driest and lightest of the traditional sherry varieties. They are consumed young and shortly after opening the bottle; within a few hours they start to lose flavor.

Whip all ingredients, except the Pedro Ximenez, with 3 ice cubes. Strain into a highball glass filled with crushed ice. Top with additional ice. Insert the lemon wheel and orange half-wheel along the backside of the glass. Finish with a splash of Pedro Ximenez on top. #shake #ontherocks
