Tokaji Smash

Tokaj, Hungary

1 wedge
A yellow citrus fruit. The peel is often used as a garnish while the juice incorporated into the drink for a tart flavor profile (citric acid).
2 wedge
A tropical plant with a tart yellow fruit. Most often used in tiki cocktails and fizzes.
2.25 oz
Wines grown in the Tokaji region of Hungary that are affected by a noble rot. The rot breaks the grapes skin causing them to become dehydrated. This has the unintended effect of concentrating the sugars, which makes wines produced from these grapes very sweet.
0.5 oz
An apricot flavored brandy liqueur, similar to peach liqueur.
0.5 oz
The most common fruit juice used in cocktails. This citrus juice is about 6% acid; pure citric acid. Lemon juice should be used the day it is squeezed, some like it freshly squeezed and others like it a few hours old.

Aromatic plants used in cocktails as a garnish or muddled into the liquor to add a light fresh taste. Common in the Mint Julep.

Muddle the pineapple and lemon wedges in a shaker. Add remaking ingredients with ice. Shake until chilled. Strain into a Collins glass. Top with crushed ice. Garnish with a pineapple wedge and mint sprig. #muddle #shake
